Fried Buffalo Chicken Poppers

1/2 cup buffalo sauce

1/2 cup shredded cheddar cheese

1/4 cup green onions (chopped)

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

1 cup all-purpose flour

2 large eggs (beaten)

1 cup panko breadcrumbs

Oil for frying (vegetable or canola oil)

INSTRUCTIONS
1. Make the Buffalo Chicken Mixture
• In a large mixing bowl, combine shredded chicken, cream cheese, buffalo sauce, cheddar cheese, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until fully combined.
2. Form the Poppers
• Scoop about 1-2 tablespoons of the mixture and roll it into balls. Place them on a baking sheet lined with parchment paper. Freeze for 20-30 minutes to firm up.
3. Set Up a Breading Station
• Place flour in one bowl, beaten eggs in a second bowl, and panko breadcrumbs in a third.
4. Bread the Poppers
• Remove the balls from the freezer. Coat each one in flour, then dip in beaten egg, and finally roll in panko breadcrumbs to fully coat.
5. Fry the Poppers
• Heat oil in a deep fryer or a deep skillet to 350°F (175°C). Carefully drop a few poppers into the hot oil and fry for 2-3 minutes, or until golden brown and crispy. Don’t overcrowd the pan.
• Remove with a slotted spoon and place on a plate lined with paper towels to drain excess oil.
6. Serve Hot
*Serve immediately with extra buffalo sauce for dipping, along with ranch or blue cheese dressing on the side.

• For extra heat, mix a splash of hot sauce into the buffalo chicken mixture.
• Want to skip frying? Bake the poppers at 400°F for 20 minutes, turning halfway through, or air fry at 375°F for 12-15 minutes.
