Poblano Grilled Drum Lollipops

INGREDIENTS

Lolipop Marinade

  • 1 Package- Farmer Focus Drumsticks

  • 6 - Poblano Peppers, deskinned

  • 1/4 cup - Olive Oil

  • 1 TBSP - Lime Juice

  • 3/4 TSP- Cumin

Elote Dip

  • 4 Cobs - Grilled Corn

  • 2/3 cup - Mayo

  • 2 TSP - Tajin Seasoning

  • To taste - Chili Powder

  • 1 cup - Queso Fresco

INSTRUCTIONS

1. Fabricate Drumsticks, removing skin and tendons off of end of drum stick, leaving “meaty” part and exposing bone.


2. Grill Poblano peppers and Corn on the cob until charred – remove skin from peppers and cut kernels off the cob.

3. Blend Poblano, olive oil, lime juice, cumin to create marinade. Add fabricated drumsticks (marinate minimum 30 mins).


4. Combine corn, mayo, Tajin, chili powder, and queso fresco in small cast iron or pan that can go on grill


5. Grill Drumsticks until 165F internal.
