Southern Poutine with Alabama White Sauce

INGREDIENTS

Chicken Thighs

  • 4-6 Farmer Focus Boneless Skinless Chicken Thighs

  • Olive Oil

  • 2 tbsp smoked paprika

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 1 tbsp brown sugar

  • 1 tsp cayenne pepper

  • Salt and black pepper to taste

Fries

  • 4 large russet potatoes

  • Olive oil

  • Salt and black pepper to taste

Alabama White Sauce

  • 1 cup mayonnaise

  • 1/4 cup apple cider vinegar

  • 1 tbsp lemon juice

  • 1 tbsp prepared horseradish

  • 1 tbsp Dijon mustard

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp cayenne pepper

  • Salt and black pepper to taste

Toppings

  • Shredded cheddar cheese

  • Cooked bacon bits

INSTRUCTIONS

Instructions:

Prepare the Smoker: Preheat smoker to 250°F (121°C) using apple or cherry wood for smoking.Season and Smoke the Chicken: Mix smoked paprika, garlic powder, onion powder, brown sugar, cayenne pepper, salt, and black pepper in a bowl. Rub chicken thighs with olive oil and coat evenly with the spice mixture. Smoke chicken for 2-3 hours until internal temperature reaches 165°F (74°C). Rest chicken for 10 minutes, then chop into bite-sized pieces.

Prepare the Fries: Preheat oven to 425°F (220°C). Wash and cut potatoes into fries, toss with olive oil, salt, and black pepper. Spread fries on a baking sheet lined with parchment paper. Bake for 25-30 minutes until golden brown and crispy, flipping halfway.

Make the Alabama White Sauce: Whisk together mayonnaise, apple cider vinegar, lemon juice, horseradish, Dijon mustard, garlic powder, onion powder, cayenne pepper, salt, and black pepper until smooth. Adjust seasoning and refrigerate until ready to use.

Assemble and enjoy.
